Hallo friends! :) How was your week? I hope you’re ready to have a fabulous weekend and try out my new recipe with strawberries, blueberries, and walnuts … I decided to call it “Power Parfait”!
This is what I’ve been eating for breakfast pretty much every morning for the past week. It’s so comforting and makes me feel good about myself, even after this injury.
Now, that’s a funny-sad story. Yesterday night, in my glamorous attempt to serve hummus for dinner (I also had in mind to take a few pictures and post the recipe today), I kind of forgot to turn off the mixer when I tried with my poor finger to fix the damn thing.
Imagine the shock, and pain, and shock again when seeing my finger inside even only for a few seconds. Fortunately, nothing bad happened to me but I can’t tell the same thing about my mixer. :))) Well, I guess I’m going shopping this weekend.
I went to the doctor this morning and he made it clear that I should stay away from the kitchen, at least for a while … I figure this weekend. :) So my weekend is going to be a fabulous injured one: shopping, healthy restaurants, shopping again and maybe running. :)))
So that’s a pretty good reason to serve strawberries-blueberries parfait once again, not to mention so quick to make. Actually, you need less than 5 minutes if you don’t need to take pictures of your meals like I do (even with this injured finger).
Now you can’t tell me anymore the story “How much I’d love to try it, but I have no time to prepare a healthy breakfast.” … ’cause you surely can! :))
Basically, you layer your favorite bowl with yogurt, a few teaspoons of soy flakes (rolled oats will also work), your favorite berries and nuts. I chose strawberries, blueberries and walnuts as toppings because I already had them in the fridge.
Get creative, use whatever you have at hand and serve it with coffee or tea. Just get cozy this weekend!
- - 150 g Greek yogurt
- - a handful of blueberries
- - 5 strawberries, sliced
- - 3 walnuts
- - 1 tsp chia seeds
- - 1 tsp honey
- Divide and layer yogurt and soy flakes into your favorite bowl/glass and top with strawberries, blueberries, walnuts, and chia seeds. Et Voilà, ready in less than 5 minutes.

Yikes! You blended your finger? Ouch! The parfait actually looks like what I usually have for breakfast during the week, but I skip the honey. Instead, my husband has 2 tsps:)
