5 Quick & Simple Weeknight Dinners
Happy Friday everyone! Where did the week go? I hope you all have a great weekend and start cooking up my simple, healthy and light dinner recipes from Monday.

Since I know so many friends (especially guys) living abroad alone, I thought I’d share a few of my favorite recipes that keep me happy and in great shape. They are not just healthy and light, but so satisfying, tasty, fresh and not to mention quick to make – 10 minutes and you are all set for the night.

You can imagine now how hard it was for me to pick favorites. Believe it or not, each recipe means a lot to me. I love them all!

Iron-Booster-Salad No. 1: Iron Booster Salad (Gluten Free & Vegan)

Hello, my favorite salad! This simple black lentils, avocado and spinach salad is totally addictive and fully loaded with valuable nutrients. If you’re looking for a quicker meal, then I’d recommend you use the red lentils instead which take only 10 minutes to get done.

This protein-rich salad packs great for lunch too. Just try it and let me know how you like the buttery texture from this mix of ingredients.

Brussels sprouts and Pomegranate Salad with Prawns
No. 2: Brussels Sprouts and Pomegranate Salad with Prawns

Brussels spouts, pomegranate seeds and prawns and are some of my favorite flavor combinations. They taste amazing together, really. And BONUS, it requires only 10 minutes to get it done so you don’t have to slave your night away in the kitchen.

Did you know that pomegranate is considered a super wonder fruit by researchers?! This is because the peel contains vast amounts of antioxidants which are released in abundance when the fruit is squeezed while topping your favorite salad.

Spinach and Walnuts Pesto with Pasta
No. 3: Spinach and Walnuts Pesto Pasta (Gluten Free & Vegan)

This recipe turned my friend’s (almost) two-year-old baby into a spinach fan. And he is not the only fan of this pasta. If you haven’t made it yet, you’ve been missing out!

Super healthy pesto made with spinach, walnuts and olive oil. I bet that your favorite part about this recipe is that you can throw this together in 5 minutes while the pasta is cooking.

Avocado Millet Salad with Minute Steaks
No. 4: Avocado Millet Salad with Minute Steaks

Did you try this bowl yet? Hurry, coz it’s so damn tasty, healthy and satisfying. I am really excited about this savory bowl as it’s super simple to make (it takes maximum 15 minutes) and it’s packed with so many nutrients like vitamins and minerals from avocado, protein from minute steaks and vitamin B from millet.

By the way, did you know that avocados are very nutritious and contain a wide variety of nutrients, including 20 different vitamins and minerals?! Not to mention, they are weight loss friendly, heart healthy and last but not least, they taste incredible.

Spicy Chicken Taco with Avocado and Yoghurt
No. 5: Spicy Chicken Taco with Avocado and Yoghurt 

I just love creative homemade tacos made with fresh veggies and meat. This is a savory dish; light but filling for your dinner appetite. I could go for one right now as it’s so easy to make and it also takes about 10 minutes to get it ready.
