Now, most of the recipes for Cook it fit get made at least ten times: nine times for real ‘life breakfast/lunch/dinner’, times in which I try to perfect them and only once for the blog when I obviously get my head around to shoot the photography for the post. Don’t get me wrong, I’m NO photographer expert, but before I shoot I like to plan ahead the scenery and that usually takes time.
But every once in a while I get a big crush on a recipe that sticks around for quite some time – months in this case. Well, because 1) this avocado egg sandwich with smoked salmon is seriously a life-changing that it must be made again and AGAIN … and 2) it keeps me going until lunch time. Not to mention, it takes 10 minutes or less to have it done.

So I guess it’s no longer a secret that I looooooove it! 🙂
OK, I admit that pouring milk over a bowl of homemade granola (here is one of my favourite recipes – Acai Granola Bowl ) is a quicker breakfast option which by the way I love having about three times a week, but isn’t satisfying, at least not to me after a long early morning run.
On the weekends, I even have them both – a small bowl of granola with lots of fruits (like berries, mango, banana), Greek yoghurt and soy or almond milk before the long run and this avocado egg sandwich with smoked salmon and cottage cheese after the run. For a more consistency, you can also pair it with 100% fresh orange juice and a lovely cup of coffee or green tea.
Can I have this sandwich for dinner you ask??? Of course! Actually, why don’t you have it right away?! And tomorrow morning for breakfast as well. I for one have it three to four times a week. That good!
Who said that eating healthy can’t be very TASTY? HELLO YUM!
- 2 large eggs (I usually buy them from the local farmers market)
- ½ avocado
- 2 tbsp cottage cheese
- 100 gr smoked salmon
- 4 slices of toasted bread (your choice)
- flaxseeds to sprinkle
