Banana & Cacao Pancakes

Healthy but super delicious flour free pancakes topped with lots of fresh berries, a splash of Greek yoghurt and a tiny touch of honey. I’d say the perfect treat on the weekends.

Hi everyone. How’s your week going so far? Apologies for posting only once a week. Honestly, I have been quite busy lately trying to find a new job (fingers crossed please).

In terms of my training week, even though the weather hasn’t been changed that much (still cold ish), I’ve had a better one: a sweaty BODYPUMP class and one loooong outdoor run, which is, by the way, one of my favorite things ever.

I for one love running so much for tons of reasons. Besides the fact that it’s so easy and accessible (it costs you nothing and you can do it everyday without any effort), I get so much energy, mental strength and self-confidence.

Banana and Cacao Pancakes
I seriously love these flour free pancakes. I could eat at least 5 of them and be hungry again one hour later. :))

As I’ve already posted the picture on all Social Media channels (Facebook, Instagram, Twitter), here it is, the long-waited recipe for the perfect flour free pancakes on the weekends.

I’d strongly recommend you serve them the way I did as it tastes divine not to mention it’s healthy too: drizzle with a touch of raw honey and served with Greek yoghurt, fresh blueberries and strawberries. HEAVEN!

Banana & Cacao Pancakes

Serves: 2
 
Ingredients
  • 1 ripe banana
  • 1 egg
  • 1 tbs shredded coconut
  • 1 tsp cacao powder
  • - coconut oil, for frying
Instructions
  1. Make the batter: peel the banana and mash with a fork. Then whip the egg in a bowl and mix it together with the mashed banana. Add shredded coconut and cacao powder and stir to combine.
  2. Fry the pancakes: heat coconut oil in a frying pan on medium heat and pour half of pancake batter in the pan at the time and fry the pancakes on both sides. Serve with lots of fresh berries, a splash of Greek yoghurt and a tiny touch of honey.
Notes
Bon apetite & remember to always "cook it fit".

MAKE IT COCONUT FREE: Opt for almond flakes instead. Use extra-virgin olive oil if you don't like coconut oil.
