Creamy Avocado Spinach Salad with Yogurt Dressing

I’m fully aware that you hardly need another recipe for salad, however, I’ve got a few ingredients that turn this simple and easy to prepare salad into a rather nutrition-packed meal. This spinach salad filled with avocado, boiled eggs and pecans served with yogurt dressing is so tasty and very light.

How to Fuel your first Half-Marathon
“You start out doing what’s possible every single day and before you know it you’re doing the impossible” – as Darcey Ann Marie beautifully said it once on Google + – Community Running.

As you already know, last Sunday I completed the Köln (Cologne) Half-Marathon, my first half ever. Hooray! :)

According to my Apple Watch and Strava, I finished the race in 1:54:55, but it seems that the official time is in fact 1:55:22. Overall, not bad, but I could have finished in 1:45 (or even less) – as planned – if it wasn’t for the pre-race jitters….

Happy Friday everyone! Where did the week go? I hope you all have a great weekend and start cooking up my simple, healthy and light dinner recipes from Monday.

Since I know so many friends (especially guys) living abroad alone, I thought I’d share a few of my favorite recipes that keep me happy and in great shape. They are not just healthy and light, but so satisfying, tasty, fresh and not to mention quick to make – 10 minutes and you are all set for the night.

You can imagine now how hard it was for me to pick favorites. Believe it or not, each recipe means a lot to me. I love them all!

10 Favorite FIT Recipes of 2014 Happy New Year, everyone! Wow, it’s a new Year … a new Resolution. A NEW SITE! Yeah! :) I really worked my tail off last year (December to be more precise) and this week to make it happen. And finally Cook it fit has got the new look I wanted and I couldn’t be happier. Oh gosh, I am done struggling with the CSS and so on – at least for a while. All I need to do now is to keep posting regularly.

I hope you guys really enjoyed the holidays and had an amazing time and took lots of funny pictures. Are the sweet cakes and cookies all gone? :) Then let’s get back on track together and start with a few recipes in order to detoxify and get back all the energy we’ll need for the new year….
