Toasted Hazelnuts & Dark Chocolate Granola

Sweet and nutty toasted hazelnuts and dark chocolate granola: Breakfast? Dessert? Delicious Snack? Say Goodbye bags of overpriced, overly sweet, store-bought granola, too.

Toasted-Hazelnuts-Dark-Chocolate-Granola-1Hey friends! This hazelnut, dark chocolate granola came to life through my never-ending granola experiment. I love homemade granola because is one of the simplest, tastiest – not to mention HEALTHY too – things that can come out of your kitchen in half an hour or less. And all it takes is a handful of ingredients dumped in a bowl, spread on a baking sheet, then thrown in the oven for a few minutes, and Voilà.

The combination of dark chocolate and toasted hazelnuts in this granola is (Really!) what steals the show. It tastes rich and even a bit naughty – basically, you can have dessert for breakfast, so don’t feel bad about it….

Avocado Egg Sandwich with Smoked Salmon
This avocado egg sandwich with smoked salmon and cottage cheese is one to die for. Metaphorically speaking! 🙂

Now, most of the recipes for Cook it fit get made at least ten times: nine times for real ‘life breakfast/lunch/dinner’, times in which I try to perfect them and only once for the blog when I obviously get my head around to shoot the photography for the post. Don’t get me wrong, I’m NO photographer expert, but before I shoot I like to plan ahead the scenery and that usually takes time.

But every once in a while I get a big crush on a recipe that sticks around for quite some time – months in this case. Well, because 1) this avocado egg sandwich with smoked salmon is seriously a life-changing that it must be made again and AGAIN … and 2) it keeps me going until lunch time. Not to mention, it takes 10 minutes or less to have it done. …
