Black Lentil Quinoa Salad with Avocado

A double dose of protein for tomorrow’s lunch anyone? Buttery black lentils, hearty white quinoa and chunks of avocado… Mmmmm, you bet it tastes awesome. Really awesome!

Black Lentil Quinoa Salad with Avocado 
Summer came back to Düsseldorf and I am SO happy. Life and people seem easier to deal with when the sun is shining.

I am also in the mood of eating tons of fruit all day long and very simple meals (fast to prepare too) like today’s salad. Now imagine the buttery black lentils combined with the hearty white quinoa how it goes. Avocado lends a lovely, buttery flavor and fresh oregano makes this salad look and taste alive. Hi everyone! Hope you’re having a wonderful week. I’m finally enjoying some much-needed fresh juices at home after a few days of eating out for pretty much every meal. Blame the mixer for that … :)))) By the way, my finger feels so much better. Thank you so much for your concern and all the love! I’m so fortunate to have you guys!

Spinach and Walnuts Pesto with Pasta

Let me introduce you to a healthy pesto sauce made out of fresh spinach, walnuts and extra-virgin, unfiltered olive oil. Wait, I am not done yet! 🙂 And now try to imagine how this beautiful pesto tastes with some pasta. I bet your kids will love it too!

Have you tried this pesto recipe yet? To my surprise, it’s so damn tasty and it’s ready in 5 minutes flat; not to mention that it’s packed with super foods.

Every now and then, I like to try out a new recipe or to add a new twist to an old one. So two days ago I realized that I hadn’t had pasta in quite some time. Having already this pesto in mind to try it out, I said why not, especially given that Wednesday evening I am heading to the gym.

Don’t get me wrong, I am not eating a large meal immediately before any kind of exercise because your body will try to digest it which takes energy. However, I still like to take my portion of carbohydrates on the workout day but about 3 hours before working out….
