You gotta make these beauties … oats, raisins, almonds, no refined sugar, exploding with flavor, MIRACULOUS!
Oh boy, instead of having my glass of water at room temperature as I usually have first things first, I went straight for the cookies. And it’s only 7 am and I’ve already stuffed my face with four of these delicious, simple and comforting crispy oats oatmeal cookies – but hey, it’s breakfast time anyway. 🙂

What are your favorite foods for breakfast? I for one love either eggs in different variations like super creamy scrambled eggs with spinach & mushrooms or egg sandwich with smoked salmon – this one I simply adore – or my bowl with granola – one to die for. Really go for it if you haven’t tried it yet.
What I love about these cookies is the fact that they set you up for your morning routine in NO TIME FLAT along a cold glass of milk, are the perfect healthy snack between 11 am and 5 pm (no more fast food on the way home) and are the BEST comforting treats. Not to mention, they cost you almost nothing to make them. BONUS!
So all you need to make these gold beauties is both types of rolled oats – jumbo type that are thick and big and the fine, smoother ones – 1 cup of each. Add them to a bowl.
Then add the rest of the ingredients such as raisins, crushed almonds (I already bought them this way), honey, olive oil, one banana, chia seeds (optional), and milk – and that’s ALL! In another small bowl crack in one egg and beat to combine – this step is optional. Mix together well – it should come together, but you might need to squelch it together with your hands to get everything properly combined.
Feel free to use whichever dried fruit you like in the mix (maybe raisins are not your thing) – like figs, apricots, and prunes all work fantastic.
At this point, the mixture will be sticky, but if you wet your hands, you will be able to it roll into walnut-sized balls – you should get around 18 in total. As you roll them, place them onto the lined baking trays. If you prefer them flatter, them squash them down a little with the palm of your hand. Bake in the oven for 20 minutes, or until lightly golden on the outside and slightly soft in middle.
Enriching our bodies with a good, nutritious breakfast that will help us kick off the day in the best way possible is so important and it doesn’t have to take long – these crispy oatmeal raisin cookies are your weekend must! 🙂
- 1 cup rolled oats – jumbo type that are thick and big

- ½ teaspoon bicarbonate of soda
- 1 banana, smashed
- 100 g raisins or whichever dried fruit you prefer
- 100 g crushed almonds
- 25 g chia seeds (optional)
- 5 tbsp honey
- 3 tbsp extra-virgin olive oil
- 1 large egg (optional)
- 100 ml milk (your favorite one)
- Preheat the oven to 180ºC (350ºF) and line 1 large baking trays with greaseproof paper.
- Add the both types of rolled oats, bicarbonate of soda, raisins (or if you add a bigger piece of dry fruit, then roughly chop them up), chia seeds, honey, olive oil, almonds, the smashed banana into a large bowl and mix together well.
- In another small bowl crack in one egg and beat to combine. Then add it into the bowl - please take note that this step is OPTIONAL. Mix together well - it should come together, but you might need to squelch it together with your hands to get everything properly combined.
- At this point, the mixture will be sticky, but if you wet your hands, you will be able to it roll into walnut-sized balls – you should get around 18 in total. As you roll them, place them onto the lined baking trays. If you prefer them flatter, then squash them down a little with the palm of your hand. - Once cooked, remove from the oven and let them cool. Bon appetite!
Keep in an air-tight container for up to 5 days. Also feel free to use whichever dried fruit you like in the mix (maybe raisins are not your thing) – like figs, apricots, and prunes all work fantastic.

Love to see you including the vegan option in your recipe. We make something very similar but use sunflower seeds or peptitas instead of almonds (we are nut free also), but I’d love to whip up a batch with almonds just for me. 🙂

I’m not sure if I did something wrong as I followed the recipe exact but the mixture was very wet rather than sticky and I had trouble forming it into balls? So I added some more oats, coconut, pumpkin and sunflower seeds and a drizzle of golden syrup and put it in a tray to make musli slice. Not quite the “crispy oatmeal cookies” I was wanting to make but it was still yummy! Haha do you think I needed to wait a bit longer for the Chia seeds to soak up the liquid and thicken a bit maybe?
