Rucola Salad with Roasted Grapes, Blue Cheese and Walnuts

This rucola, blue cheese and walnuts salad served with roasted grapes makes for a great dinner – light enough not to knock you down so quickly, but surprisingly delicious from the roasted grapes to awaken your lust… for everything! ;)
Ingredients
  • 5 ounces /150g rucola
  • 1¼ cups/4 ounces/115g walnuts
  • 4 ounces /115g blue cheese
  • 1 tsp. extra virgin olive oil
  • salt and pepper to taste
  • Dressing:
  • 500 gr white seedless roasted grapes
  • 1 tsp. extra virgin olive oil
  • ¼ tsp. salt
  • ¼ tsp. ground black pepper
  • ¼ tsp. oregano
Instructions
  1. Preheat oven to 180°C (~356°F). Toss grapes with olive oil, salt, and pepper, and roast them on a sheet pan for about 30 minutes until grapes are nicely shriveled and semi-dried but still slightly plump. Let cool.
  2. Once they’re done, throw them in a rucola salad with good blue cheese and walnuts. Just keep it simple. Drizzle with just enough balsamic vinegar to lightly coat, tossing to combine. Season with salt and pepper and toss in more vinaigrette if desired. Enjoy!
