Simply put, a pumpkin & apple pie smoothie made from scratch that will exceed your expectations. Oh yeah – sweet, refreshing and nourishing! If this 100% homemade smoothie doesn’t knock your socks off, I don’t know what will.
I know that these days everybody has a pumpkin pie smoothie recipe in their repertoire, but this one is a bit different. It’s a common practice to buy the pumpkin puree form the supermarket and to sweeten it by adding sugar or syrup. However, that’s not my way.
So the other day I decided to combine a few of my favorite ingredients to make a consistent, 100% natural smoothie out of pumpkin, apple, blueberries and banana – without any refined sugar or artificial sweeteners! I wanted something that I could enjoy on cold rainy days that would satisfy a craving for something sweet – while still packing in tons of nutrition.
Before all the ingredients go into your blender or food processor, make sure you roast the pumpkin and apples as they are the base for this recipe. Usually, l like to add bananas to my smoothies for the creamy texture, but, in this case, too much of it would definitely overpower the taste of the pumpkin and apple. So try to use only half; just enough to give the smoothie a nice and creamy consistency.
If you’d prefer to make it even sweeter, add another roasted apple. You will kick up the sweetness in a healthy way. Remember that naturally occurring sugars, such as the ones found in apples, should account for most of your overall sugar intake.
Having said all that, all you need to make this smoothie is a regular blender, love for fresh fruits and veggies and about 10 minutes of your time. First you need to roast half of a pumpkin and a few apples (depends on how sweet you want it), then add them to a blender along banana & blueberries, pour still water and blend them until they become smooth.
If you are the kind of person who likes to eat thick smoothies with a spoon, then go ahead, use a little bit less water and add a couple of ice cubes. And yes, it’s true, the ice makes the smoothie thicker.
Another thing I like about this smoothie recipe is that it’s quite light, yet keeps you full for a long time.
- ½ pumpkin (500 g), roasted
- 2 apples, roasted
- 1 banana
- a handful of blueberries
- 2 cups of cold still water
- First, preheat the oven to 250ºC (~450ºF). Line a large baking tray with non-stick baking paper. Place the pumpkin and the apples in a single layer on the tray (of course, after you deseeded the pumpkin and cut it in pieces). Roast for about 10 minutes or until the pumpkin is golden and tender.
- When the pumpkin and apples are roasted, add them all into the blender. Pour in cold still water and blend them together until smooth and creamy.
Get creative, use the ingredients you have at hand but make sure you "cook it fit".
