Spaghetti with Strawberries and Walnuts

This is it “my first recipe written in real time (as I’m having the spaghetti). :)) Crazy??? Maybe. However, give this recipe a go and see what I mean – creamy from yoghurt and naturally sweetened from strawberries … walnuts too. Oh yeah, this tastes like the best decadent dessert EVER!

Happy Monday everyone! πŸ™‚ I hope you are all well and enjoying the sun. πŸ™‚

As you might have already guessed, this post is going to sound different. BETTER? I don’t know, you tell me. πŸ™‚Β 

It is 3 pm and I kind of feel peckish. Yep, I can definitely eat something. So I go to the kitchen and open the fridge. Hmmmmmm, not much, I really have to go the store TODAY! I then open the cupboard and spot immediately the spaghetti. πŸ™‚ Great, now what?! :)))

‘Just wait a few minutes and see’ I said to my stomach. I start cooking the spaghetti according to the package instructions – it says 7 minutes. Meanwhile, I take out of the fridge, in this order: Greek yoghurt (of course it is not 0% fat ’cause I am not scared of FAT) and strawberries (yummy). I should also use some walnuts. On my way to grab the walnuts, I accidentally pushed away the honey bottle. ‘NOW, that’s just what I need to perfect it’.

10 minutes later, I hear myself saying ‘Gosh, this tastes insanely delicious!!! I should take at least a picture and post it on Instagram’. Then it suddenly clicked ‘I am going to quickly take 2, maximum 3 photos of this plate and then sharing it with all of you while I am enjoying it’. :))

Honestly, for the first time in my life I didn’t have the patience to take more than 3 pictures. Sorry guys, but this spaghetti recipe with strawberries, walnuts and yoghurt is way too good to waste any of my time on props.

Spaghetti with Strawberries and Walnuts
Just look at this … Creamy from the yoghurt, naturally sweetened from strawberries .. but walnuts?! They are just what you need to balance the flavours.

Keep it simple, don’t use too much of those listed ingredients and I promise you a decadent dessert! Not to mention, so fast to make, kid-friendly and BUDGET-friendly.
Off to the gym NOW! :)))

Spaghetti with Strawberries and Walnuts

Cook time:  7 mins
Total time:  10 mins
Serves: 1
 
Ingredients
  • - 100 gr whole-wheat spaghetti
  • - 75 gr plain Greek yoghurt (35% fat)
  • - 10 medium strawberries
  • - 1 tsp honey
Instructions
  1. Cook the spaghetti according to the package instructions (maximum 10 minutes).
  2. Meanwhile, wash very well the strawberries and cut them up into the desired size pieces.
  3. After the spaghetti is cooked, drain it and serve it on the plate. Add the rest of ingredients on top such as yoghurt, walnuts, strawberries and honey. Enjoy it!
Notes
Get creative, use the ingredients you have at hand but make sure you "cook it fit".

    Wow, what a great but unusual recipe! Like most people I imagine, I’ve never tried spaghetti with strawberries…but I’m up for it! The carbs would be nice the night before a good, long run…right?
