Cauliflower Mac and Cheese with Asparagus

I bet that’s one of the lightest versions of mac and cheeses you can find on the internet. And it’s also a great way to sneak in some veggies just so you can feel guilty free.

The weather has been messing up with my mood lately, very sunny between 8 and 10 a.m. and rainy for the rest of the day … like that song “All day long”. Crap, really! 🙁

Tropical chicken whole wheat pasta with white asparagus and avocado – so simple, so tasty, so quick! And it’s one of my favorite before-workout meals. So yummy!

I simply love combining avocado with almost everything for both its creamy texture and various potential health benefits.

Quick salad with fresh spinach and asparagus, the creamy quinoa and then garnish it with big chunks of fresh orange for a refreshing flavor.

Of course, asparagus, especially the white one, may be found year round from other parts of the country, but nothing compares to the texture and flavor of this meticulously cultivated local delicacy during its season.
