Hummus & Black Lentil Tacos with Kohlrabi SaladI’m going to be straightforward: I LOVE TACOS! There is never a bad day for tacos if you ask me. Plus, they rank up there with burgers (don’t do burgers that often, though) and wok noodles (here is one of my favorite recipes Spicy Chicken Wok Noodles) for their versatility, and rightly so. Avocado Egg Sandwich with Smoked Salmon
This avocado egg sandwich with smoked salmon and cottage cheese is one to die for. Metaphorically speaking! 🙂

Now, most of the recipes for Cook it fit get made at least ten times: nine times for real ‘life breakfast/lunch/dinner’, times in which I try to perfect them and only once for the blog when I obviously get my head around to shoot the photography for the post. Don’t get me wrong, I’m NO photographer expert, but before I shoot I like to plan ahead the scenery and that usually takes time.

But every once in a while I get a big crush on a recipe that sticks around for quite some time – months in this case. Well, because 1) this avocado egg sandwich with smoked salmon is seriously a life-changing that it must be made again and AGAIN … and 2) it keeps me going until lunch time. Not to mention, it takes 10 minutes or less to have it done. …

A double dose of protein for tomorrow’s lunch anyone? Buttery black lentils, hearty white quinoa and chunks of avocado… Mmmmm, you bet it tastes awesome. Really awesome!

Summer came back to Düsseldorf and I am SO happy. Life and people seem easier to deal with when the sun is shining.

I am also in the mood of eating tons of fruit all day long and very simple meals (fast to prepare too) like today’s salad. Now imagine the buttery black lentils combined with the hearty white quinoa how it goes. Avocado lends a lovely, buttery flavor and fresh oregano makes this salad look and taste alive.
